Epic Pancake Bacon God Cake

This weekend my friends and I did a lumberjack bar crawl for several people’s birthdays. You may be asking…what is that? and why?

To answer both questions, I present to you:

As you can see, it was a hilarious night of plaid-clad mayhem that was not to be missed. So next time you get invited to one of these, hit your nearest thrift shop, don some plaid and suspenders and get ready for a night to remember!!

To ensure that our guests were well fueled for a long night of drinking and rampaging, Colin requested a Pancake God cake.I had made this once years ago, but I knew I’d have to take it up a notch for this birthday party!

This multi-layered towering spectacle of goodness was a real crowd pleaser and actually tasted AWESOME! (I was surprised at how good it was!!) All those barely crispy on the outside, fluffy on the inside pancakes, layered with candied bacon, blueberries, and cemented together with cream cheese frosting. WOW. So much flavor and texture!

So here’s the recipe. It’s is NOT healthy at all, but man if it isn’t delicious and entertaining at the same time!!

Epic Pancake Bacon God Cake

Layers of pancakes, bacon and cream cheese frosting make for an epic treat!
Ingredients
  • Box of pancake mix (I used 2 boxes of Hungry Jack for 7 huge pancakes)
  • 1-2 packets of bacon
  • 2 cups brown sugar
  • Pillsbury easy frost cream cheese frosting (So wrong and so easy to spray directly into your mouth..)
  • Blueberries, strawberries, whatever fruit you like!
  • Maple syrup (lots of it)
  • Chopped pecans
Instructions
  1. Heat oven to 375
  2. Lay bacon strips out on a foil lined cookie sheet and generously sprinkle brown sugar on top
  3. Cook bacon in oven for about 15-25 min (depending on how done you like your bacon – I like it crispy!). Remove to a paper towel lined plate when done to let it cool/drain off fat.
  4. While bacon is cooking, mix up your pancake batter and let it sit about 3 min before cooking to let it fluff up.
  5. Spray a large pan with cooking spray and ladle about 2.5 ladles of pancake mix into pan. Cook about 3-5 min per side and then place on a large plate. Keep making more pancakes until you’ve had enough.
  6. Assembly time! Place one pancake on a large serving plate that will hold it. Pour about 2 TB of maple syrup on top. Add a generous swirl of frosting. Add 2-3 strips of candied bacon, some fruit, and a sprinkle of pecans. Add more frosting and plop the next giant pancake on top. Smack it a lil for good measure. Repeat until you are out of ingredients and garnish with some bacon/frosting/fruit on top to make it look nice.
  7. Add birthday candles and dive in!
